And, that’s not even mentioning Smyth’s flawless menu, executed seamlessly by head chef Alan Stuart. That level of professionalism, and ability to put their guests at ease, deserves a standing ovation. It’s also fun, and we find ourselves chatting and laughing with the team as the night progresses. Restaurant manager Michael Stoddart tells us we will meet all waitstaff throughout the evening, saying: “it’s like a dance.” And a dance it is, one that’s meticulously orchestrated, incredibly intuitive, and thoughtful, as up to four servers place intricate dishes in front of us. Why we love it: The level of service at Oncore by Clare Smyth cannot be overstated, and is unlike anything we’ve experienced before (and we eat for a living, so that’s really saying something). What is it? Three Michelin-starred British chef Clare Smyth’s first and only international restaurant, located at Crown Sydney.
